κ-Carrageenase, from Zobellia galactanivorans (EC 3.2.1.83), is an enzyme systematically known as κ-carrageenan 4-β-D-glycanohydrolase (retaining). This enzyme catalyzes the hydrolysis of the (1→4)-β-D-glycosidic bonds between D-galactose 4-sulfate and 3,6-anhydro-D-galactose in κ-carrageenan. The primary hydrolysis products are neocarrabiose sulfate and neocarratetraose sulfate.
